Oven Baked Vegetables with Sheep Cheese.


My current favourite snack. We always seem to have lots of vegetables left over, so I've started baking them in lots of oil, and keeping them in the fridge. Then, when I want a snack, voila!

    Sounds and looks lovely - but what exactly are those things in the photo - is it bread underneath? or something mexican? K x

    It is bread! (And I sometimes put mayo on the bottom of the bread, and sometimes oil, and sometimes avocado)
